Brinjal Varikatris are the smaller variety of Brinjals that are egg-shaped with white-purple strispes on the shiny skin. The creamy, white flesh is enjoyably bitter tasting with several small, soft edible seeds that add up to the much-needed crunch. The stem, though, is thorny at times and needs to dispose of carefully after cutting from the round body.
